Smoothie Pop!

I love ice cream.  Ice cream loves my hips.  It's a bit of a twisted love affair, so I've been trying to cut back. I love a cool treat in the summer, though, since getting diabetes I've been hunting for an alternative to the freezie.

On a recent trip to Ikea, I bought these little cuties, and decided that maybe I had discovered a solution to the ice cream dilemma.
Of course then I was stuck for recipes, since I'm pretty sure when my mom made these the content was 98% sugar and 2% water.  Her popsicles were a glorified combination of Kool-Aid and Jell-O, and while they tasted delicious as a child, I'm looking for something more now.

I did what any girl would do: I asked for help on Facebook and got a list of great ideas! 

My first experiment was to use my regular smoothie mix (Thanks for the idea, Lisa!).  Nothing special to this recipe, just some frozen berries (black, blue, strawberry, raspberry), about 3/4 cup of milk, two or three tablespoons of yogurt and a dollop of juice.  Yum!

I have to say they were mighty tasty and The Len very much agreed!

In hindsight, however, I may opt to use fewer berries, since the seeds were mildly annoying.  The flavour was amazing, though!  I can see us using these are our healthy sweet threat throughout the summer!

  2. Great idea! May have to try that myself. I remember the ones my Mom used to make with the Koolaid and Jello too - they were tasty, but yet lots of sugar

  3. My mom made them with orange juice - we'd suck on them, suck all the orange out, and end up with an ice cube on a stick! I much prefer the smoothie option! The yogurt makes it a bit softer, a better texture.

  6. I make popsicles year-round because I love something cold to snack on, but can't do the dairy of ice cream.
    Have a recipe for no-yogurt pops?
    I have a recipe that uses Jello for the thickener, with 100% fruit juice and mashed fruit. They are yummy, too.
