Did you notice I took a wee blogging break? It was, in a word, blissful. I didn't have to work from Christmas Eve until today and it was a delightful break. There were some days I didn't even bother to get out of my jammies. Those are good days, friends. Very good days.
I read five books. Ate a ridiculous amount of food. Watched twelve hours of movies. Snuggled. Slept. Went to the mall (twice) and didn't buy a thing. Trimmed my nails. Lamented my need for a pedicure. Ate some more. Chatted on the phone. Visited with friends and family. Cleaned my house. Decided that someone needs to make a dress pant out of flannel so that I never need to be uncomfortable again...
You get the general idea.
And now we are here in a new year, with a fresh start and a contest that needs finishing. So let's continue on our merry way, shall we?
The Recipe:
Judy's Pork Chops
6-8 lean pork chops
2 TBSP oil
3 cans chicken and rice soup
Flour Mixture
* 1 cup flour
* 1/2 TBSP salt
* 3 tsp dry mustard
* 1 tsp garlic powder
1. Dredge pork chops in flour mixture (I throw it all in a big ziploc and shake it around).
2. Brown in oil in large frying pan.
3. Place browned pork chops in crock pot and pour soup over the top.
4. Cover and cook on low for 6-8 hours. Serve over rice with a side veggie.
Of course, since there are only two of us, I used two pork chops and 2 cans of soup since I found one can barely even covered the meat.
We are photoless, unfortunately. Apparently the morning I made this, my camera's ability to take a photo that wasn't blurry was on holiday. It happens...

I found the pork, while still tender after being in the crock pot that long, a bit too bland for my taste. I was also put off a bit by the chicken and pork combination of flavours. I'm not sure that I would attempt this recipe again, without some serious modifications.

I agree with Thelma on the chicken and pork combination; it wasn't my favourite meal.

I think that using cream of mushroom soup over the pork chops is delightful. You might try that next time, with some mashed potatoes. Mmmm, comfort food.
