Nameless 'Quick & Super Yummy'

Your Recipes. My Crock Pot. You Win.
OK, I'm sure that's not what the submitter of this recipe actually calls it, but I'm not sure what to call it either.  And really, a little facetiousness goes a long way.  Trust me on this.

We had a busy Saturday this weekend, so I planned ahead and prepared a Monday Crock Pot meal for dinner that night.  I had a discussion with myself about whether or not that would be considered cheating and we agreed that perhaps those waiting for a prize might even appreciate me moving things along.  So, not only is it not cheating, it's also just a good idea.  You're welcome!

Sacha disagreed, actually.  And refused to take a photo with me, knowing full well that I would post it on here pretending like she did agree.  It's a complex relationship.  She still loves me.

The Recipe:
I had some trouble determining whether picante sauce is the same as picante salsa.  We have, after some Googling, decided that it is.  The rest of the ingredients were easy to find, and it was a breeze to throw together.  I chose not the add the corn requested in the recipe.  I may or may not have issues corn, which is all I'm going to say about that.
Nameless 'Quick & Super Yummy'
2-3 boneless chicken breast (you can use boneless thighs if you like dark meat)
1 jar of picante sauce
1 lg can of black beans
1/2 bag of frozen corn
2 small cans of green chiles

Put everything in the crockpot in the morning except the black beans, adding them approximately an hour prior to eating just to heat through. Cook on low for 6-8 hrs.  Serve over Spanish rice, or wrap up as a burrito and top with toppings you love, ie, sour cream, cheese, guac, olives. Enjoy!

Before adding the black beans, I pulled out the chicken, shredded it and tossed it back in the crock for the last hour.
We decided to fill whole wheat wraps on Saturday night. I never say no to an opportunity to eat avocado!
Sunday evening we had the leftovers over brown rice with a dollop of sour cream on top.  It was quite a delicious combo!

I found the recipe quite delicious; it was easy to prepare and is made of items I normally have in my cupboards/freezer anyway.  I'm not sure I would use this as a Monday meal, as I wouldn't have a chance to add the beans for the last hour, but I could see this recipe becoming a winter staple.

  4. OK - I did NOT like your picture of the raw chicken. Raw poultry makes my skin crawl. I'm guessing that's why your cat wouldn't pose for the picture. Her skin was crawling, too!! The finished meal sounds great, though!!

  5. This looks and sounds yummy, I'm going to try it! This is another fun part of this contest - I can try the recipes after reading your reviews and tips.
    Thank you for determining that picante sauce is the same as picante salsa - I wouldn't have known otherwise, either.
    I also might try it sometime, adding the beans in the morning. I've used black beans in chili and let them cook all day - they were fine, I thought. I'm not a black bean connoisseur, though. :)

  7. I would add corn, but not half a bag. Corn overkill. I'm also curious about spice level. I may have to dust off the crock pot for this one; I love anything tex-mex!

  8. The green chiles are not particularly spicy; they add more of a sweetness to counteract the tomatoes. You could buy a hotter picante sauce if you wanted, but overall, it was good flavour without being too spicy.
