The Recipe:
This recipe is very simple, and I only made a single substitution: instead of using a can of condensed tomato soup, I chose to use canned diced tomatoes instead. Tomato soup and I have a rocky past... of which I shall spare you the details.
Crockpot ChiliThe Rating:
1 lb. extra lean hamburger
1 clove garlic
1 chopped onion
1 chopped green pepper
14 oz. canned kidney beans, NOT drained
10 oz. canned sliced mushrooms, drained
10 oz. condensed tomato soup
1 1/2 tsp. chili powder
1/4 tsp. seasoning salt
1 tsp. sugar
1/2 tsp. salt
1/8 tsp. pepper
1. Saute garlic; brown ground beef until cooked through. Drain.
2. Layer chopped onion and green pepper in the bottom of the crock pot.
3. In a separate bowl, combine remaining ingredients and stir well. Add browned ground beef and garlic to the ingredients to combine. Pour on top of green pepper and onion in the crock pot.
4. Cook on low for 6-7 hours or on high for 3 hours. Serve with fresh bread and enjoy!

I love that this recipe has ingredients that I often have on hand. It's very easy to prepare which is always a plus. I had some concerns about the green pepper, but apparently cooking over low heat for that amount of time took away the bitter taste that green pepper could sometimes give. Generally I found the flavour lacking and thought that the texture of the mushrooms detracted from the overall enjoyment of the dish.

I thought the dish was very tasty. The flavour was good both the first time and on the reheat. We enjoyed it with a slice of Belgian bread, and I hope Thelma will make it again.

I added 2-3 chicken breasts to my crockpot and then shredded them and mixed them back into the soup right before we were ready to eat. Dan needs meat at every meal ;).
