My Favourite Things: Monday

Welcome to the Thanksgiving Day edition of MFTM!  Canadian Thanksgiving, at least!

As I was preparing my contribution to this year's Thanksgiving dinner, I was pondering my favourite Thanksgiving food.  While I don't particularly love turkey, I do love stuffing.

And, as it happens, I was responsible for the stuffing this year!  Being as clever as I am, I started snapping photos as I went along.  However, at some point I realized I was strapped for time and forgot to take some other important photos, like the bread I used and the stuffed bird.  So we shall have to make do!

I think it's important to note that when I talk about stuffing it's not the rehydrated-just-add-water-and-fluff-with-a-fork stuff that comes in the box.  This is real stuffing.  That stuffing that you actually stuff inside a bird and then eat while attempting to say 'Ohmygoodness' around a mouthful of food.

I may be a stuffing purist.  Maybe...

At any rate, borrowing heavily from my mother's method of making stuffing, you start with onions, mushrooms and lots of butter.  Well, actually you should start with bread, but I forgot to take a photo of that.
This year I decided to add in some Granny Smith apple and celery.  My mother may be cringing right now.  She's a stuffing purist too, and I'm not sure of her thoughts on the inclusion of apple.
And spice.  Lots and lots of spice.  Parsley, thyme, rosemary, oregano.  Times three.  I like to add the spices to the hot pan rather than to the bread mixture. 
Here is where you need your bread.  This year I chose two different breads: a cheap white bread and a more hearty wholegrain french bread.  I used about half a loaf of each, sliced them into small squares:

Take your onion/mushroom mixture and pour it over the bread.  Be sure to scrape every drop of butter from the pan onto the bread.  You need the butter.  It makes the turkey happy.  Next step: stir and stuff!

Final step: enjoy.  Hmmm...  it's great with a side of buttered roll.  Have we ever talked about how much I love bread?

  1. Mmmmmm. Looks yummy. I want some, 'cept can you hold the mushrooms? My stuffing *always* comes out of a box, but I do doctor it up! Does that make it halfway acceptable?

  2. I have been known, on the very rare occasion to add apples....but not my favorite. I'm sure it was delicious though! One day maybe I'll be able to taste yours :)

    Does your family bicker about who ate/stole the most stuffing too?

  4. I've added cranberries to stuffing before, with pecans - it went over well. I'm not a huge stuffing fan ... though I've come to appreciate it over the years, as well as cranberry sauce. I am a kid at heart and love the ambrosia salad and yes, the dark meat turkey.
